Firkins are commonly used by breweries that prefer to naturally ferment and carbonate their beer. Unlike regular kegs, firkins use gravity to dispense beer and do not rely on CO2 for carbonation or dispensing.

Many brewers believe that cask beer tastes better when naturally fermented and carbonated. There are even beer festivals dedicated to showcasing "cask conditioned" beers.
