Potassium Metabisulfite is an anti-oxidant, bactericide and stabilizer.  It preserves the natural color of foods and beverages and protects against bacteria and wild yeasts, molds and micro-organisms.  Potassium Metabisulfite releases sulfur dioxide into wine must or any solution. 

It is a white powder with a very sharp odor of sulfur dioxide. 

Potassium Metabisulfite is indispensable in the making of wine.  It is also used when storing used Lenticular filter discs in conjunction with citric acid to lower the pH of the storage solution.
