Selected for its ability to increase aroma and palate complexity, with rapid fermentation rate at 64 - 86 F.
Fusion strain is considered a low to moderate nitrogen consumer with alcohol tolerance in the range of 15% - 16%. Good flocculation strain and low foaming. Fusion has the capacity to release varietal white aromatics including peach, nectarine, lemon zest and subtle floral aromas. Highly recommended for Chardonnay, Semillion, Chenin Blanc, Cabernet, Merlot and Malbec.
