Red Star Cote des Blancs Wine Yeast

Cote des Blancs yeast is also sometimes known ad Davis 750 or Geisenheim Epernay. It ferments relatively slowly with less foaming than most other yeasts. This yeast strain emphasizes the fruity character in both whites and reds. A great choice for fruit wines too. When fermented at cooler temperatures it will not ferment to dryness, producing a sweeter wine with some residual sugar. If fermenting Chardonnay you must use some yeast nutrient. Red Star Cote des Blancs wine yeast is by far our most popular yeast for producing hard cider.

Relatively slow fermenter, low foaming. This yeast requires nutrient addition for most chardonnay fermentations, produces fine, fruity aromas. Ferments best between 64 - 86 F.
