In brewing, spunding or bunging is a process that can be used by the brewer to naturally carbonate their beer. The spunding valve is hooked up to the fermenter during the later stages of the fermentation, when the yeast has already consumed most of the sugars in the wort. The bunging device is similar to a pressure release valve. By turning the dial you can hold the exact amount of pressure that you want. The pressure gauge that is included verifies how much pressure is in the tank. The glass cup can be filled with water or sanitizer to keep your tank sanitary during the fermentation process.
