Saccharomyces cerevisiae strain, selected for its contribution to mouth-feel, with the palate being intense, round and full for red wine.
Similar fermentation characteristics to Maurivin PDM, allowing the varietal fruit characters to be displayed. Good alcohol tolerance in the range of 15% - 16%. AWRI is considered a moderate nitrogen consumer and low to moderate foaming strain. A rapid rate fermenter at warm temperature of 68 - 86 F. with short to moderate lag phase. Excellent flocculation strain.
